Our “Me Paìs” classic method sparkling wine—which translates from Piedmontese to Italian as “my country”—is made from an ancient white grape variety native of Piedmont.
For the second fermentation, this wine follows the classic method, which involves aging in the bottle for approximately 36 months on its own yeast. This process is designed to fully enhance the varietal characteristics that define it, including a pronounced acidity, which gives it long-lasting freshness and longevity.
At the end of the 36 months, disgorgement takes place, which is performed at least 6 months before the bottle is released for sale.
